This is a huge problem in the bar business. You need an experienced 
bartender but not one so experienced that you lose money.

  There are many very busy clubs that go out of business because most of 
the money is going into employees pockets. The owner is often oblivious. 
I had a friend that filled in for a bartender that took a couple weeks 
off. The owner was amazed that the receipts were twice what they had 
been. The difference, of course, was honesty.
