Get a film camera. While your Fuji S5700 is a good beginner's
camera for digital color, it really lacks lots of things that one would
want for black and white photography.
Considering the price of used film cameras (next to nothing or free), you
can get a really nice one and learn black and white with it. If you don't
want to get into doing your own processing, you can use special film
called "chromogenic". It's just a color film that only produces
black and white negatives, so you get (most) of the advantages of
black and white film (it does act differently, but not much) with
the ability to get it processed at any one hour lab.
You can even get it developed and scanned so you can use your normal
workflow and experience instead of setting up a darkroom and learning
how to make your own prints.
